Repair Venetian date and custom-field activity translations

Replace twelve Italian-seeded activity and background labels. Restore completed/uncompleted and set/unset action meanings, preserving ordered percent placeholders and source/destination movement. Direct wording remains low confidence pending fluent-speaker review.

Validation: correction ledger token, JSON example, key-order and merge-preservation checks pass.
